I have SO many summertime foodie favorites!

Garden fresh tomatoes are at the top of my list, along with cherries, kohlrabi and peas!

I grew up with my Dad growing a huge garden every year. He's defintely the reason why I have such a huge love for good food!

I don't have much time or space for a garden of my own, but we have a great farmer's market a few miles away in downtown St Cloud and the non-profit I work for has a wonderful community garden!

So thankful I have these options for good, fresh food so close by!

Today's recipe is perfect for all tomato lovers. You kinda have to love garlic too, since it adds such a great flavor to this vinaigrette!

This dressing is tangy, rich and so quick to prepare!

I originally made it to toss with this Zucchini and Herb Salad, but also make it for lettuce salads, pasta salads and more!

I really need to be more intentional about making homemade dressings more often! I forget how fast and easy they are to make, but still find myself going for the store bought.

Both my daughter and I love vinaigrettes, so I really need to experiment and see which ones she likes the best!

Putting it on my to-do list!

If raw garlic isn't your thing, you can substitute roasted garlic, garlic powder or skip the garlic altogether!

I totally think this dressing is great with or without garlic because the tomatoes have such a bold flavor and it can compliment the flavors in the food you serve it with.

If you don't have access to garden fresh tomatoes in the summer or need a good store bought tomato, try Campari tomatoes.

They are super good and as close to garden fresh you can buy in the store.

Campari's are also reasonably priced, so it's budget friendly.

What is in Tomato Garlic Vinaigrette?

  • Fresh tomatoes: They are technically a fruit since they have seeds, but are prepared or served as a vegetable in savory dishes. They contain lycopene, which has great health benefits, vitamin c, potassium and folate. They are served fresh or cooked and can be roasted, canned, dehydrated or frozen for use later.
  • Garlic: My love for garlic is real. I use it in almost everything I cook and I love the health benefits it offers. Garlic is part of the onion, leek and chive family. It's great for heart health and contains many vitamins and minerals.
  • White wine vinegar: is white wine that has been fermented and oxidized into an acid with a lightly fruity flavor. It can be used for brining, braising or in vinaigrettes. It has an acidity level of 5-7 percent.
  • Extra virgin olive oil: This is a liquid fat obtained from pressing whole mediterranean olives. It's used for cooking, bread dips and making salad dressings. It has a lower smoke point than other oils, so you'll want to use it when cooking at a lower temperature.
