  • 800g crushed fresh tomato
  • 1 red bell pepper

  • oregano (optional)

  • Water to boil the pasta
  • Extra virgin olive oil

  1. The first step in this recipe for chorizo pasta is to chop the garlic, onion, leek, and red pepper and saute them.
  1. Once they take on a little color, add the crushed tomato, bay leaf, sugar, and a pinch of salt. Cook it for 20-25 minutes on medium/high heat.
  1. Remove the bay leaf and pass the tomato sauce through a blender or food processor. You could skip this step if you choose to use the store-bought sauce for this pasta and chorizo.
