What mom doesn’t want a freezer stocked full of meals that are ready to go for busy weeknights? Meatloaf is one of those good old fashioned comfort dishes that everyone loves and it couldn’t be easier to whip up a few of these babies for the freezer

Making several meatloaves at once only takes a few minutes of your time and then you’ll have a nice stock in your freezer for busy nights. Go ahead and plan on serving one for dinner and throw the rest in the freezer. It couldn’t be any simpler. If you’re new to freezer cooking, then you may have a few questions. How to make 6- Ingredient Freezer Meatloaf:

Mix all ingredients in mixing bowl. I like to use my hands to make sure everything gets mixed well.

Place meatloaf mixture into a greased loaf pan and form into a smooth loaf shape.

If baking now, top with extra ketchup and bake at 350 for 1 hour or until the internal temperature reads 155 F. If freezing for later, wrap with plastic wrap and heavy duty foil, then label with the date and cooking instructions. Frozen meatloaf will last up to 4 months in the freezer.

What if I want to make a bigger meatloaf?

This recipe for freezer meatloaf that I am sharing is fairly small using only 1.5 pounds of ground beef, but it easily fed my family of four. I made them this size because my freezer pans were on the small size, but you can make the same recipe using 2 lbs of ground beef if you prefer a larger meatloaf.

What if I don’t have freezer pans, can I still make this recipe?

If you don’t have or don’t want to use freezer loaf pans, then you can line regular loaf pans with gallon sized freezer bags and fill them with the meatloaf mixture. Simply seal the bags (removing as much air as possible) and place everything in the freezer. Once your meatloaf is frozen you can remove the loaf pan and your meat will be the perfect meatloaf shape.

How long will the meatloaf last in the freezer?

Freezer meatloaf is best if used within four months. You should take care to wrap your meatloaves in heavy foil, plastic wrap or freezer bags. Also, don’t forget to label your meatloaf with the date you froze it and detailed cooking instructions. You can visit the USDA website for more information on ground beef and food safety.

How long should I cook meatloaf from frozen?

If your meatloaf is thawed, you can bake it at 350 for 1 hour or until the internal temperature reaches at least 155 F. A frozen meatloaf needs 1.5-2 times longer than a thawed meatloaf, therefore you will need to bake it at 350 for at least an 1 hr and 30 minutes, but it may take up to two hours. Be sure to check the internal temperature to verify that it is done. As a reminder, the safe internal temperature of meatloaf is 155 F.
