These shortbread biscuits were made by our 7 year old chef - they are very easy and extremely tasty - kid approved!

Our daughter loves being in the kitchen. I think most kids do, to be honest.

I saw a video the other day of a child who must have been no more than 4-years-old cooking egg fried rice, over an open fire for him and his brother.

It shocked me at first, then I realised how overprotective we may be in the UK, and I perhaps need to let the bubble wrap off a little.

However, there's no need to worry over this recipe. It's really easy to make, and your kid will go nowhere near open fires!

Super-simple, anyone can make these biscuits.

Perhaps you're after a sweet treat that doesn't take long to prepare, or maybe you're looking for something to keep your kids busy when it's wet out?

Either way, these homemade shortbread biscuits are a winner!

You start by adding butter to sugar.

We find it a good idea to cut the butter into small cubes first as it makes beating the butter and sugar together easier.

You're aiming to get a smooth consistency.

Next, add in the flour.

You don't need to worry about sieving it (although you can if you really want something else to wash up).

Stir it in with a spoon.

You'll only get so far.

You're aiming for a smooth batter, so it's a good idea to get your hands in the bowl and knead it.

You don't want to overdo it as the butter will make it a little moist.

Now is the time to grab your rolling pin.

Roll the dough out until it's about ½cm thick.

You can use a cookie cutter of any shape to make your biscuits.

Alternatively, you could make shortbread fingers and cut them (although, you would probably want a thicker biscuit).

Keep re-rolling the dough out until you use it all up.

Be sure to leave a bit of space between each biscuit as they will expand very slightly when baking.

If you overwork the dough, the butter warms up, so you may need to add a little flour to your surface to stop it sticking.

It only adds 10 minutes to the time, but you need to make sure to chill the shortbread biscuits before baking them.

How many you (or your little chef) make will depend on how big each biscuit is cut.

We got about 24 biscuits, you may get a few less or a few more.

Ingredients

  • 200 g butter £1.20
  • 100 g sugar 7p
  • 300 g plain flour 9p

Instructions

  • Cut the butter into small cubes so it's easier to work with. Place the butter in a bowl and beat together with the sugar until it's smooth.

  • Sieve the flour into the bowl and mix with a wooden spoon, using your hands to form a ball.

  • Place a little flour on a surface to stop things sticking and roll out the dough ball until it's around ½cm thick.

  • Using a cookie cutter (any shape) cut biscuits and place on a baking tray. Re-roll the dough to make more cookies.

  • Place the cookies in the fridge to chill for 10 minutes.

  • Bake in a preheated oven at 160°C/140°C Fan/Gas mark 3 for 15 - 20 minutes until they are a light golden brown.
